A champagne for the late, quiet moment – best with an uncomplicated but stylish plate: arugula, tossed in lemon juice, finest olive oil and coarse sea salt. Add a large Burrata Pugliese, accompanied by truffle burrata – pure, creamy, intense. Finest anchovies in olive oil and a few caper berries round out the picture.

In the glass: 85% Pinot Noir, 15% Chardonnay. Brut Nature – 0g dosage. Biodynamically vinified (since 1989 – true pioneers). 34% reserve wines, aged in wood. Aromas of apple skin, yeast, bitter herbal spice. Structure, tension, quiet depth.

The burrata brings creaminess, the truffle burrata even more depth – and the salty-citrusy arugula sets the accent. The anchovies? Not just a salt provider, but fine seasoning with character. Even a whole anchovy on the fork remains in balance – thanks to quality and composition.
