Oysters paired with the Zéro – a combination I love coming back to again and again.

No big setup, no fuss. Just taste, compare, let it work.

The oyster flight - incredibly fresh from:

1️⃣ Fine de Claire - Clean, salty, direct. The purest start – ocean, freshness, tension.

2️⃣ Fine de Claire Verte - Softer, rounder, slightly creamy. Already here it becomes less edgy, more texture.

3️⃣ Pousse en Claire - A bit smaller, but incredibly meaty and tender. Little iodine, lots of depth – clearly the sweet spot in the flight.

4️⃣ Spéciale de Claire – deux fois affinée - So large and meaty that I even had to cut two of them up. More pressure, more substance, a real knockout.

Paired with the Tarlant Zéro: A champagne without dosage and without makeup. Very dry, extremely precise, with fine acidity, salty minerality and remarkable calmness. Not an aggressive Brut Nature, but controlled, clear and incredibly focused.

Perfect with the oysters because it doesn't mask anything.

We served pure lemon and Tabasco again, but personally the shallot mignonette was completely sufficient for me. I also tried one oyster of each variety completely pure – just for the pairing with the champagne. And that's exactly where everything was very harmonious.

Tasting Notes

A champagne without dosage, very dry and extremely precise with fine acidity, salty minerality and remarkable calmness. Not an aggressive Brut Nature, but controlled, clear and incredibly focused.
