And this is tradition at Lanson: The house deliberately forgoes malolactic fermentation – a process where natural malic acid is converted into softer lactic acid.
The result: The champagne remains fresher, edgier, more precise – with more tension on the palate and a citrusy, lively structure that often gets lost in other rosé cuvées.
