A platter full of oysters on ice – and the question: Which champagne goes with it?

Paul Hazard – Vieilles Vignes – Millésime 2013.

Assemblage: 57% Meunier, 23% Chardonnay, 20% Pinot Noir • Dosage: 0.4 g/l • Expression: fresh wood influence, white fruits, slightly bitter-fresh notes • Winemaker's recommendation: Oysters

Paired with Gillardeau oysters and three homemade vinaigrettes:

  1. Classic Mignonette – shallots & red wine vinegar
  2. Citrus-Tabasco vinaigrette – nicely spicy, with lime & apple cider vinegar
  3. Soy-lime vinaigrette – Japanese inspired

I also enjoy some oysters completely pure – with a little splash of champagne right into the shell. Simple, salty, fresh – and somehow just right.

The champagne isn't a classic pairing – but it's a perfect counterbalance: Soft, deep, with a delicate floral note – and enough structure to stand up to saltiness, citrus freshness and spice.

The combination is bold, but rewarding. A nice reminder that champagne doesn't always have to be a perfect match – sometimes it can just be different than you'd expect.

Tasting Notes
