Robert Allait — Sublimis 2021

Sublimis 2021

Robert Allait | Blanc de Blancs | Vintage 2021

Some bottles keep coming back to the table because they deliver exactly what you're craving.

The Sublimis 2021 belongs in exactly this category for me. I've had several bottles of it by now – and this citric presence gets me every time. Clear, precise, vibrant, without becoming sharp.

Especially with Indian cuisine: Butter chicken with rice, raita, chicken momos, some naan. Creamy, spicy, warm – a perfect playground for this citric freshness.

The Sublimis cuts through the sauce, keeps the spices clean and stays focused.

The mango lassi had to wait - but somehow it's always part of the experience for me

Tasting Notes

Citric presence with clear, precise and vibrant aromatics, without becoming sharp. Cuts through creamy sauces and keeps spices clean.
