Satay skewers, mango chutney, grilled broccoli, cashews, rice, lime. That sounds like vacation. But it was Monday afternoon.

The idea: something Asian, but without much effort. Something that's smoky, fresh, sweet and lightly spicy all at once.

And then the question: What pairs with it without getting lost?

The year 2017 was not an easy vintage. On the night of April 21st, bitter cold descended over Avize – late frost, merciless and dangerous. Benoît and Séverine fought all night against the ice to save their plot – with fire, with wind machines, with everything they had. They were victorious in the end. But nothing was certain yet.

And when the summer was practically done, the next blow came: Two weeks before harvest – 50 millimeters of rain in just a few days. Botrytis threatened. The grapes began to turn. What followed was pure handwork: Three times Benoît personally went through the vines, cut out, sorted, checked every grape.

No compromise. No hesitation.

And you can taste it.
