Brut in the glass – clear, precise, beautifully dry. Paired with a quick chocolate mousse as accompaniment.

But: unfortunately they didn't quite come together. The mousse too sweet, the champagne too taut – there was more contrast than harmony.

But hey – sometimes even a pairing fail is enjoyable. Because it shows how much a good champagne can do – and where its limits are.
