Sometimes the best combinations come from pure hunger, last night there were little mini-burgers with beef, jalapeños, onions, tomatoes and a spicy curry sauce. Paired with the L'Octave from Hatonet & Filles, a 100% Pinot Noir from Boursault in the Vallée de la Marne.

The champagne started a bit too cold and therefore very tight, lots of acidity, little perlage, almost restless. After some time in the glass, the transformation: toasted nuts, light bitterness, more depth.

An interesting wine, but not one that stands up to spicy sauces.

That's why I enjoyed the last two glasses after dinner much more - more of a soloist that needs space, perhaps with figs, dates or aged cheese.

Tasting Notes

Initially very tight with lots of acidity, develops toasted nuts, light bitterness and more depth after time in the glass. A soloist that needs space and is better showcased without spicy dishes.
