The Henriot Brut Rosé is a fresh, clear champagne with good acidity. Important to know: It doesn't work with very sweet food. When the food is very sweet and the champagne is on the dry side, it quickly comes across as sour, sharp and too harsh. A Demi-Sec or Doux harmonizes better in such cases — more residual sweetness, less contrast.

On its own, the Rosé shows what it can do — gooseberry, freshness, structure and an almost golden-yellow color that's unexpected for a Rosé, but striking.

A good example of how important proper pairing is: The champagne itself is convincing, but needs the right culinary setting.
