15 years on the lees. No dosage. And only around 1,000 bottles produced. The 198 – Millésime 2006 from Perseval-Farge is not a cuvée for every day – but just right when a quiet moment calls for depth.

A bottle for moments that call for depth. Something with structure and maturity. And that's exactly what this champagne delivers: not spectacular in the first second – but growing greater with every minute in the glass.

The opening: citrusy, herbal, almost a bit closed (which might also be due to the initial temperature – this bottle can handle 3-4 degrees more than you'd think). Then nuances of candied citrus peels, almond, honey and a hint of roasted hazelnut develop on the palate – with increasing temperature, a fireworks display.

Clear, dry, deep.
