Today I'm going all out with flavors: homemade hummus, fiery zhug, spicy shakshuka, grilled eggplant and fresh tomato salsa. The fact that my plate looks more like "creative chaos" than fine dining doesn't detract from the enjoyment at all!
With it, a wine that not only holds up to this concentrated, spicy-hot variety of flavors, but complements them - the "Meunier tu dors".
For those who don't know Romain Hénin: we're deep in the realm of artisanal, natural champagnes here (his experimental series "La Bulle Libre"). 100% Meunier - without Dosage (Brut Nature), without added sulfur and aged with minimal intervention, it shows incredible energy.
The typical, juicy-fleshy Meunier fruit harmonizes brilliantly with the smoky eggplant and the spice in the shakshuka. At the same time, it brings a purist structure that perfectly captures the sharp zhug and cuts through the creaminess of the hummus. An absolute pairing highlight!
A special shoutout also goes to the fantastic label created by Nicolas Sautel ( ). It visually captures the wild, non-conformist soul of this wine perfectly!
Nerdy fact on the side: the label shows December 8, 2025 as the dégorgement date. But for those wondering why the bottles were already available at some retailers before then: there's a well-known label error here! The wine was actually disgorged in September 2025. We love stuff like that, don't we?
