The Vincent PersevalBlanc de Blancs Millésime 2019 is a single-varietal Chardonnay with character. A champagne that pairs beautifully with oysters as well as on its own – and shows particularly well in the Fatto a Mano Black Tie glass.

On the nose: Clear citrus notes, a hint of ripe pineapple and a subtle floral note. On the palate: Precise acidity meets fine creaminess. Alongside the citrus freshness, the pineapple becomes even more pronounced, accompanied by mineral nuances that give the champagne depth. The finish? Long and elegant – definitely leaves you wanting more.

For oyster pairing: Pure lemon is perfect – fresh and beautifully harmonious. A classic mignonette with shallots and red wine vinegar also complements the champagne nicely and emphasizes the briny flavors of the oysters. Tabasco, however, is too dominant – the champagne almost disappears beneath it.
