Ayala stands for a modern, straightforward style – less Dosage, more freshness, really crisp. A house that for many stands somewhat in the shadow of its big neighbor Bollinger, but that's exactly what makes it exciting.

The facts: Grape varieties: 55% Chardonnay, 30% Pinot Noir, 15% Meunier. Aging: Minimum 3 years on the lees. Dosage: Brut, with only 6 g/l – so super fresh.

In the glass: Fine perlage, fresh citrus notes, plus a hint of white flowers and some green apple. Very clear on the palate, taut and with really beautiful saline freshness that immediately makes you want a third sip after the second.
