On 12/27 there were leftovers from Christmas turkey with rice, spinach and the last dumplings – all together as curry.
For this I deliberately grabbed the – num. II · Les Miscellanées from the cellar again, this time as Brut.
In direct comparison to the same cuvée as Demi-Sec, this is noticeably tighter and clearer in contour. Less embrace, more structure. Yellow fruit, some dried fruit, a hint of praline – but always with drive. Nothing sweet, more organizing.
The comparison to the Demi-Sec version with the panettone from the night before was particularly interesting. In the end it remains the same wine. When you balance the sweetness of the panettone against the higher dosage, it shows very clearly what the Brut delivers here.
Here the acidity takes the leading role. It cuts through the dish, takes out heaviness and immediately makes you want the next bite. Exactly what this meal needed.
Tasting Notes
Taut, clear champagne with yellow fruit, dried fruit and a hint of praline. The acidity takes center stage and provides structure and drive.
