Blanc Assemblage
Before the big 60th birthday menu with a private chef, there was a Chavost – Blanc Assemblage as a warm-up. Originally intended as an accompaniment to Fondue Bourguignonne – but curiosity got the better of me and the bottle was open before the first piece of meat.
A mix of aperitif and flowing transition into the meal. A natural wine champagne that polarizes – but that's exactly what makes it exciting.
Tasting Notes
A pure, unadorned champagne without sulfur addition with an energy that awakens. Spontaneous fermentation with complete malolactic fermentation.
