L'Esprit de Chapuy is deeply rooted in the Grand Cru village of Oger, one of the most renowned sites on the Côte des Blancs, famous for its chalky, almost saline Chardonnay. The house works precisely and with focus on exactly this material, aged in stainless steel to bring the origin unadulterated into the glass.

The Unique Oger takes this to the extreme. As a Brut Nature, completely without Dosage, the Chardonnay remains totally unmasked: cool stone freshness and white flowers on the nose, on the palate a razor-sharp, chalky precision. A wine that doesn't embellish anything and for exactly that reason is the perfect partner for oysters, a cutter that slices directly through the texture and lets the sea speak for itself.

When it comes to pairing with fresh oysters, purity has become my top priority. In my glass today: the "Unique Oger".

Oger is one of the most renowned Grand Cru sites on the Côte des Blancs and known for its chalky, almost saline structure. In this "Unique" version as Brut Nature (Zero Dosage), the Chardonnay remains completely unmasked. Cool stone freshness and white flowers on the nose, razor-sharp precision on the palate.

A little oyster retrospective: I've been experimenting a lot lately, and this Unique Oger fits perfectly into my "oyster history". While a Tarlant Zéro or the Legras & Haas Les Sillons accompany the iodine notes with purist power, and the Météyer Cuvée Marine rather softens the acidity of a mignonette through its light Dosage, the Unique Oger is the absolute "cutter". With its chalky character, it cuts directly through the texture of the oyster and lets the sea speak for itself. For anyone seeking the pure, unvarnished experience, this is exactly right.

It's precisely this clarity that was the perfect partner here for the oysters with lemon and classic mignonette. A pairing that feels like a short trip to the coast: direct, honest, and damn fresh.
