The Cuvée Spéciale from G. Tribaut works excellently as a companion to hearty, rustic dishes – like a creamy pumpkin soup with a trio of cheese bread variations.

The breads were simple but fantastic: lightly toasted bread, baked in the oven with cheese – one with Parmesan, one with Roquefort with a touch of "Miel du Vignoble" from , and one with Grès Champenois, very lightly peppered.

Visually compared to the pumpkin soup, not a highlight – but culinarily really strong.

The champagne proved to be an ideal companion: fine structure, slightly aged notes, subtle brioche warmth – it beautifully caught the sweetness of the pumpkin and carried the breads, especially with the Parmesan and Grès Champenois.

With the Roquefort, however, that was the limit – the champagne couldn't stand up to that power - but that was pretty much clear beforehand. So I just ate the breads at the end.

A wine that works exactly where many champagnes would be too elegant – charming, but not tame.
