Today the bottle choice wasn't mine. I usually have a pretty clear idea of which champagnes I want to open for which situations. And then my daughter came back from the cellar – with the S.A. Sans Année.

A great champagne. But not the one I had in mind for this moment. And that's exactly why it was almost even more exciting.

Meunier and Chardonnay from Vandières, spontaneously fermented, aged in wood, Brut Nature – without Dosage.

Today there was a little coincidence: My wine cooler must have thawed slightly again, the cold wasn't circulating ideally. The bottles at the bottom were therefore about 2–3 degrees warmer – and so this champagne came into the glass at what felt like 50–52°F.

In that moment it was perfect. The wine immediately showed its deepest notes: spice, a hint of clove, almost subtly Christmas-like.

But since I also wanted to experience it cooler, we took our time and let the cooler work on the table for another 30 minutes or so.

As the temperature dropped, the picture shifted significantly: Citrus peel, herbs, damp chalk, a very clear line. Dry, structured, calm – with an acidity that carries and holds the whole structure cleanly together.

Not a champagne for "just because." But exactly right when you're ready to listen to it – and consciously decide which of its facets you prefer at the moment.

The bottle came from the champagne package from and shows pretty well why curated selections sometimes bring exactly the wines into the glass that you didn't have on your radar yourself.

Maybe that's also the most beautiful way to open a bottle: not planned – but with openness.

Tasting Notes

At warmer temperatures it shows spice and a hint of clove, almost Christmas-like. Cooler, citrus peel, herbs and damp chalk dominate with a clear, structured line and supporting acidity.
