Anyone who loves Pinot Noir can't overlook Paul Clouet. Even though the wines are technically made in Cramant, the heart of this Sélection clearly beats in Bouzy. You can immediately sense this in the power and structure that the Pinot Noir brings here.

What makes this champagne so exciting for me is the "patina" that the house talks about – a large proportion of old reserve wines creates wonderful maturity and depth. On the nose, ripe apples and apricots come through, underscored by a hint of dried roses and brioche. On the palate it shows almost creamy, reminiscent of lemon cake with vanilla pudding, yet remains precise and fresh at all times thanks to the low dosage of 4g/l.

It has presence and this fine balance between the elegance of Chardonnay and the power of Pinot from Bouzy.

Tasting Notes

Ripe apples and apricots on the nose, underscored by dried roses and brioche. Creamy on the palate with notes of lemon cake and vanilla pudding, while remaining precise and fresh thanks to the low dosage.
