Vignoble & Terroir

Paul Clouet farms vines in Bouzy, Bergères-les-Vertus, Cuis, and Fossoy. The centerpiece consists of south-facing parcels in Bouzy Grand Cru with Pinot Noir vines over 45 years old. The Bouzy terroir delivers the typical power and structure that defines these champagnes: powerful Pinot Noir at Grand Cru level.

Viticulture & Sustainability

"Au commencement est la vigne" (in the beginning is the vine), everything starts in the vineyard. The focus is on old vines in south-facing sites. The 45-year-old and older vine stocks in Bouzy provide the foundation for the depth and concentration of the Blanc de Noirs.

Vinification

The base wines mature in stainless steel tanks on fine lees, partially also in oak barrels, especially for the Brut Sélection. A large proportion of old reserve wines provides maturity and depth, described as "patina." The dosage ranges in the Extra Brut area between 2.5 and 4 g/l. The philosophy: "L'éphémère cherche le plaisir" (the ephemeral seeks pleasure). The goal is a "vin méditatif" with depth without heaviness, balance of power and freshness.

Brut Sélection

Ripe apples, apricots, dried roses, brioche. Creamy with notes of lemon cake and vanilla custard. The large proportion of reserve wines brings depth, Bouzy Pinot delivers power, Chardonnay provides elegance. Base blend from multiple terroirs: Bouzy Grand Cru, Bergères-les-Vertus, Cuis Premier Cru, Fossoy, aged in stainless steel and oak barrels, 30 months aging.

Vintage 2016 Blanc de Noirs

Intense aromas of ripe red fruits and cherries with mature patina. Powerful, round, and precise with perfect balance of strength and freshness. Described as a "vin méditatif," depth without heaviness. Seven south-facing parcels in Bouzy Grand Cru with vines over 45 years old, 84 months aging.

Bouzy Vintage 2015

Powerful Blanc de Noirs with aromas of red berries, brioche, spice, and roasted nuts. Full body with silky texture and long, spicy finish. More mature, round, and spicy than Cramant styles: Bouzy Pinot in all its power. 72 months aging.
