When you think of Piper-Heidsieck, you often picture the classic red label. But if you want to experience the true soul of the house in its purest form, you need to reach for the Essentiel Blanc de Blancs.

What makes this wine so special? It's the signature of Chef de Cave Émilien Boutillat. He has given the "Essentiel" range a precision that fascinates me every time. This isn't about mainstream, but about savoir-faire: less dosage, significantly more aging time in the cellar, and an impressive proportion of reserve wines.

On the nose, this is pure freshness: lemon zest, lime and white flowers, underlined by fine chalky minerality and very subtle brioche. On the palate it's razor-sharp, but thanks to the long lees aging (at least 3 years) still wonderfully creamy and deep. A wonderful candidate for my glasses from Zalto, which frame this spectrum perfectly.

Particularly impressive: under Émilien, Piper consistently emphasizes transparency. A glance at the back label reveals everything about the disgorgement date and dosage, which isn't a given for larger houses.

A Blanc de Blancs that bridges the gap between the glamour of a grande maison and the depth of a grower champagne.
