The Sublimis 2021 from Robert Allait surprises me anew every time. I've had it solo, with sushi, with Indian food – and this time with a small cheese plate. And honestly: never been disappointed.

Sure, it brings serious drive on the citrus line – typical Allait. But that's exactly where its charm lies: Depending on what you pair it with, the tone in the glass changes. Not in its structure, but in its effect.

This time the setup was deliberately simple – but well thought out:

Mild Gouda with the house Miel du Vignoble from Robert Allait Wine cheese, served pure Gorgonzola with fig-macadamia chutney and allspice

Paired with the Sublimis 2021 – fresh, clear, with precise perlage and noticeable minerality. The freshness remained, but it became embedded: • The honey made it softer • The wine cheese had a neutralizing effect • The Gorgonzola with chutney brought out depth and spice
