The other day we found ourselves at in Vienna.

To start, we had oysters: Fines de Claire & Gillardeau, both super fresh, both with that fine, briny elegance that's already a great opener on its own - or for us would also work in sufficient quantity as a main course :)

With it, a bottle of Vintage 2015 – and I was surprised how well the vintage worked as an aperitif: clear, structured, with that typical VC creaminess that still doesn't overwhelm.

For the main course it was then lobster, tiger prawns, scampi, scallops, half-shell mussels, sole – with creamy spinach. A little seafood feast on one plate.

And here the 2015 really shone. The combination of freshness, structure and the slightly mature, brioche-like undertone was made for the warm, succulent character of the seafood. Especially with lobster & scallops it was a bullseye.

And on top? The champagne was served in the on request – that rounded out the whole evening.

Simply a perfect evening. Not just because of the champagne, not just because of the food – but because everything fit together.

Tasting Notes

Clear and structured with typical VC creaminess that doesn't overwhelm. Slightly mature, brioche-like undertone that pairs especially well with seafood like lobster and scallops.
