Right when pouring, the Éole from Antoine Grethen shows this light copper tone – warm, restrained, almost golden.

On the nose, fine herbal spice, tart red fruit, a hint of florality. Nothing intrusive, a calm note, precise and elegant.

On the palate then this clear, chalky texture: lean, focused, quiet – with a delicate tart fruit note that gives it character.

24 months in barrel and 24 months on lees give it structure, but no heaviness.

More like the wine is saying: "I have calm. Take some for yourself."
