A 100% Chardonnay from three old parcels in Cramant, all over 55 years old. Hand-harvested on August 29, 2018. No enzymes, no fining, no filtration. Instead, 10 months in wood, complete fermentation, without any manipulation. Just time, patience, and precision.
The style? Delicate, but with depth. Floral, but not playful. Citrus, chalk, salinity, a Blanc de Blancs that doesn't just show its origin, but almost celebrates it. And still far from any posturing.
Bottle number 602 of 699, so not everyday stuff, but a statement.
And yes: if you really want to understand it, don't serve it too cold. Right glass, in my case the Performance champagne glass, open mind, and here we go.

A delicate yet profound Blanc de Blancs with floral notes, citrus, chalk, and distinct salinity. The champagne shows its Cramant origin in an elegant, unobtrusive way.
