Raclette is one of those dishes for me that runs all evening long, which is exactly why it's so perfect for New Year's Eve. No big fuss and no perfect setup – just little pans with cheese, potatoes on the table, bacon, pickles and pearl onions on the side, and here and there a few tiger prawns, because why not.

Paired with the Accord de Cépages, and it meshed together surprisingly well. Raclette can quickly become heavy, fatty, filling – and that's exactly where you need a champagne that's not just fresh, but has structure and creates space on the palate. The Accord doesn't come across as sharp or stern, but rather generous and juicy, with yellow fruit and a warm, round character. And yet there's enough drive left in it to bring air back in between bites. Especially with the bacon and the cheese richness, it was really enjoyable, and the prawns were like a little, salty reset button in between.
