Yesterday I had a real hidden gem again: The "Assemblage 3 Cépages" Millésime 2020 from Colette Bonnet.

Colette Bonnet farms just 2.24 hectares in the south of Champagne and works with complete conviction using fully organic methods. Her focus is on bringing the special terroir of the Côte des Bar (Kimmeridgian limestone and clay) into the bottle as purely as possible.

What makes this cuvée so special is revealed in its name. It unites three grape varieties: 54% Pinot Noir brings structure and dark fruit, 31% Chardonnay provides elegance and freshness. But the real twist is the 15% Pinot Blanc. This often forgotten champagne grape variety gives the wine wonderful creaminess, smoothness and exotic fruit notes.

After 45 months on the lees, this 2020 vintage champagne was just freshly disgorged in February 2025. Through malolactic fermentation, it shows beautifully round and approachable on the palate. With only 4 g/l dosage and extremely low sulfur use, it remains absolutely pure, drinkable and draws its tension deep from the limestone soil of Noé-les-Mallets.
