Last night we had the obligatory and long-awaited cheese fondue, very classically with white bread. This year very fittingly paired with the "Noir d'Eulalie" Extra Brut from Edouard Duval.

This champagne brings enough depth to stand up to the cheese, while staying fresh enough not to add unnecessary heaviness.

In the glass, it shows exactly the balance you want with such a meal: structure and substance for the cheese, while maintaining freshness and drive that reset the palate after each bite.

The Pinot Noir from the Côte des Bar provides the right grounding. The wood complements everything with a fine, slightly oxidative note, while the Dosage deliberately stays in the background.
