A champagne with real structure – the Cuvée des Crayères Edition 37 from Eric Rodez. It pairs particularly well with grilled fish and spicy sides, like sea bream with sharp lemony broccoli and rosemary potatoes.
Pinot Noir (60%) and Chardonnay (40%) bring power and freshness in perfect balance. The multi-layered aromas – yellow stone fruit, brioche, nutty notes and a touch of honey – make it expressive and complex. Exactly what you need for grilled flavors and spicy sides. The roasted notes from the fish and the spice of rosemary potatoes are beautifully complemented here. The fine acidity ensures that the dish doesn't feel too heavy at the same time.
On the nose: Ripe yellow fruits, brioche, almond, light spice. On the palate: Creamy structure, fine perlage, beautiful balance between freshness and depth. On the finish: Long and elegant, with a pleasant nuttiness.
For glassware, I recommend the Riedel Fatto a Mano Black Tie Champagne glass. The shape isn't too bulbous, so the champagne doesn't feel too heavy, but also not too narrow, giving it enough room to develop. A champagne that shows character.
