The Forget-Brimont Brut Nature based on 2019 is a champagne that pairs particularly well with spicy, Levantine-inspired dishes – like hummus with grilled eggplant, a red onion salad, and ras-el-hanout chicken on a tomato curry. Complex, spicy, creamy – and yet the champagne handles everything surprisingly well.

The cuvée comes from Premier and Grand Cru sites in the Montagne de Reims: Ludes, Chigny-les-Roses, Montbré – plus Mailly, Verzenay, Verzy.

The aromatic profile is accordingly taut and precise, but not harsh: yellow fruits, some citrus, a light chalky line, plus the darker spice of the two Pinots.

No sweet finish, no soft filter – just direct, straightforward expression of the Montagne de Reims.

Exactly the right balance for a meal that itself has many layers.
