The Forget-Brimont Brut Nature based on 2019 is a champagne that pairs particularly well with spicy, Levantine-inspired dishes, such as hummus with grilled eggplant, a red onion salad and Ras-el-Hanout chicken on a tomato curry. Complex, spicy, creamy, and yet the champagne surprisingly captures everything beautifully.

The cuvée comes from Premier and Grand-Cru vineyards of the Montagne de Reims: Ludes, Chigny-les-Roses, Montbré, plus Mailly, Verzenay, Verzy.

The aromatic profile is correspondingly taut and precise, but not harsh: yellow fruits, some citrus, a light chalky line, plus the darker spice of both Pinots.

No sweet finish, no soft filter, simply direct, straightforward expression of the Montagne de Reims.

Exactly the right balance for a meal that itself has many layers.
