As you can see in the photo from my setup, we don't have that bright, flashy pink that you sometimes see with rosés. The color is more of a wonderfully elegant salmon pink with delicate, almost rust-colored reflections. Forget-Brimont is based in Ludes and draws on first-class terroir from the Montagne de Reims for this cuvée (including Grand Crus like Verzenay, Verzy and Mailly-Champagne). The blend is a classic reflection of the region: 40% Pinot Noir, 40% Pinot Meunier and 20% Chardonnay. To achieve the color and fine berry fruit, about 6% red Pinot Noir is added as still wine (Rosé d'Assemblage). What makes this champagne particularly smooth and approachable is the enormously high proportion of reserve wines at 40 to 50%! After 3 years of aging in chalk cellars, it delivers a pure blast of red berries on the nose: strawberry, raspberry and red currant. On the palate, thanks to the 9 g/l dosage (Brut) and the completed malolactic fermentation, it's wonderfully round, fruity and balanced, but maintains its clear freshness through stainless steel tank vinification, which I deliberately wanted to showcase with the Performance glass.

I hadn't even smelled it yet when my wife spontaneously said "Wow, this is delicious!" – and honestly, that says more than any tasting note.

A classic Brut as you'd want it: fresh, balanced and surprisingly harmonious. Notes of green apple, white flowers and a hint of brioche – with fine, creamy mousse and pleasantly clear acidity.
