The Jacques Sonnette Blanc de Noirs 2019 pairs beautifully with pasta with fresh salmon, topped with burrata and crisp cocktail tomatoes – uncomplicated, but just right. The creaminess of the cheese and the fresh acidity of the champagne work wonderfully together.

Assemblage: 75% Pinot Noir, 25% Meunier. Vintage: 2019. Dosage: 6 g/l (Brut). Aging: 4 years on lees. Origin: Charly-sur-Marne (Maison Jacques Sonnette, anniversary cuvée, limited edition).

On the nose: red fruits, some pâtisserie, white flowers, yellow fruits. Fresh, fruity and with clear structure. A Blanc de Noirs that's already lots of fun when young – and worth putting a few bottles in the cellar to rediscover with completely different power in the coming years.
