Bouzy Grand Cru is the undisputed home of Pinot Noir – and the 2016 vintage from Paul Clouet is the ultimate homage to this terroir.

At Paul Clouet, the credo is: "Au commencement est la vigne". Everything starts in the vineyard, specifically in seven south-facing parcels with vines over 45 years old.

Unlike many other vintages, we have a 100% Blanc de Noirs in the glass here. After seven years on the lees, the 2016 shows impressive intensity: the nose is dominated by ripe red fruits, almost cherry-like, paired with the "patina of time".

On the palate it's powerful, round and incredibly precise, which is also due to the extremely low dosage of only 2.5 g/l.

The house describes it as "vin méditatif" – a wine that has depth but never feels heavy.

This exact balance of power and freshness was the perfect partner for today's plate: fresh figs, creamy goat cheese, walnuts and a good drizzle of honey. The pairing is a true interplay – the champagne's ripe fruit notes echo in the figs, while the goat cheese challenges the structure of the Pinot Noir. A moment of pure epicureanism, just like the house motto: "L'éphémère cherche le plaisir" – the fleeting moment seeks pleasure.
