After the magnificent Tom Kha, we had beef tenderloin with carrot-ginger cream, wild broccoli, and thyme jus as the main course.

This calls for structure, which I delivered perfectly with the Verzy Grand Cru 2020. 100% Pinot Noir, spontaneously fermented in 500-liter barrels. I chose the larger glass here, as this wine needs space to unfold its full depth.

The mineral power from Verzy and the light cocoa notes on the finish are the ideal counterpart to the sous-vide cooked, butter-tender filet and the subtle ginger heat. This combination was definitely the highlight of the evening and shows that we don't necessarily need red wine with filet. :)

With 3g Dosage, it comes perfectly balanced and forms the ideal "middle ground" between the aperitif and the Zéro Dosage from the first course. The length was also incredible: The wine brings amazing calm to this course, as you can taste for about 20 seconds after each sip before the next bite follows.

Honestly, I had the most concerns about this bottle beforehand, as I had classified Georgeton as very taut and almost too clear. But with the right temperature (not too cold!), this was an absolute home run – the breadth and depth really surprised me.

Mineral power from Verzy with light cocoa notes on the finish. Incredible length and calm, perfectly balanced with great breadth and depth.
