has a clear vision: to bring terroir into the glass as purely as possible. With the Mes 4 Terroirs you can literally taste this journey. The name says it all here, as the grapes come from his four most important sites in the Montagne de Reims: the three Premier Crus Ludes, Chigny-les-Roses and Rilly-la-Montagne, plus the Grand Cru Verzy.

On the nose this is wonderfully bakery-like at first, you can almost smell the fresh bread, along with hazelnut and a hint of raspberry. On the palate it shows a creamy, almost silky texture, but stays beautifully taut thanks to the low dosage and the salty energy of the chalk soils. A real character champagne without unnecessary makeup that shows how vibrant biodynamic winemaking can taste.

I paired this today with something you might not immediately associate with champagne: an Asian-inspired noodle soup. The base was a homemade broth from yesterday's chicken carcass, enhanced with green curry paste. Along with glass noodles, turkey fillet, sugar snap peas, carrot strips, lots of cilantro and fresh chili. It's fascinating: the fine saltiness of the champagne perfectly buffers the heat of the curry, while the herbal notes in the wine play brilliantly with the fresh cilantro. A pairing that shows champagne doesn't back down even when there's serious "pow" on the plate.

Tasting Notes

Bakery-like on the nose with fresh bread, hazelnut and raspberry. Creamy-silky on the palate with salty energy from the chalk soils, kept taut by low dosage.
