I've now tasted quite a few champagnes from them, from Blanc de Blancs to Rosé. So it was only a matter of time before the Réserve Premier Cru bottle came up from the cellar. What's inside? Origin: Jouy-lès-Reims, Montagne de Reims 50% Pinot Noir | 30% Pinot Meunier | 20% Chardonnay ⏳ 9 years aging on lees, and you can tell! Dosage: 9.6 g/l Aroma: Ripe yellow fruits, honey, a hint of toasted almonds Taste: Creamy and soft, subtle brioche notes, plus a fine spice and elegant acidity Definitely a bottle that shows how much maturity and character a Premier Cru can have! Which champagnes from Vincent Perseval have you tried, or are there other grower champagnes you can recommend?

With his cuvée of 40% Pinot Noir, 40% Pinot Meunier & 20% Chardonnay, he brings exactly what I was looking for: Powerful fruit that can stand up to the jalapeños & spicy ground beef. Pleasant residual sweetness (11.2 g/l dosage) that softens the heat. Freshness & acidity that harmonizes perfectly with tomato, cucumber & lime and the prominent fresh cilantro.
