I've tasted 4 champagnes from Legras & Haas — enough to form a solid impression. The house is located in the Grand Cru, Côte des Blancs, Blanc de Blancs Terroir, works with Chardonnay, Pinot Noir, Pinot Meunier and shows a clear signature in its range.

Legras & Haas is based in Chouilly — one of the six Grand Cru villages on the Cote des Blancs, directly at the foot of the slopes south of Epernay. Chouilly is less famous than Le Mesnil-sur-Oger or Avize, but it's on par with these villages when it comes to Chardonnay quality. The chalk formations under the vineyards are particularly powerful here and give the wines a mineral character that's almost saline.

What distinguishes Legras & Haas from many other Blanc de Blancs specialists is their consistency in a purist style. Several Cuvées are bottled as Brut Nature, meaning completely without Dosage. That's a clear statement: the grower trusts that the quality of the base wines speaks for itself, without needing residual sugar to smooth the edges. And indeed — with Legras & Haas champagnes, this works. Despite the lack of Dosage, the wines aren't aggressive or drying, but show a natural harmony and creaminess that comes from the Terroir.

The Legras family has been growing grapes in Chouilly for generations and knows their plots down to the last detail. This knowledge is reflected in the precision of their champagnes. Each Cuvée has a clearly defined character, and nothing feels arbitrary or interchangeable. From the entry-level Intuition to the Grand Cru Sillons, there's a common thread running through the range: minerality, clarity, precision.

Terroir and Location

The champagnes from Legras & Haas come from the Grand Cru, Côte des Blancs, Blanc de Blancs Terroir. The Côte des Blancs is the epicenter for Chardonnay and Blanc de Blancs — chalk soils, elegance, minerality. The house has access to Grand Cru sites, which is reflected in the quality of the base wines.

Chouilly is located at the northern end of the Cote des Blancs and benefits from a slightly cool microclimate situation that gives the Chardonnays special tension and freshness. The chalk here is Belemnite chalk — fossil remains of prehistoric cuttlefish that give the soil a unique mineral signature. It sounds poetic, but you can actually taste it: this salty, almost iodine-like minerality that runs through all the Cuvées from Legras & Haas.

The Cuvées in Detail

Les Visions Grand Cru

Cool nose with citrus zest, green apple and white flowers, followed by fresh brioche and salty minerality. On the palate taut, lively and focused with fine perlage. Highlights: crystal clear, taut, salty minerality, purist style.

Les Visions is for me the champagne that best represents Legras & Haas: Grand Cru Chouilly, pure Chardonnay, crystal clear and without any disguise. The salty minerality in the finish is almost like a fingerprint of the Terroir — unmistakable and distinctive. A champagne for purists that doesn't try to please but challenges instead.

Les Sillons 2017

Despite being Brut Nature (0 g/l Dosage), surprisingly soft and harmonious. The minerality feels round and almost creamy, especially when paired with oysters. Highlights: Blanc de Blancs, Grand Cru Chouilly, creamy minerality, purist.

Les Sillons is the flagship: Grand Cru Chouilly, vintage, Brut Nature. Everything that can be left out in champagne has been left out — and yet the result isn't austere but surprisingly soft and harmonious. The creamy minerality is a paradox that only the best Terroirs of the Cote des Blancs can produce. With oysters, this champagne is a revelation — the salinity of the sea meets the salinity of the chalk subsoil.

My tip: This champagne screams for oysters. Anyone who hasn't tried the combination: Brut Nature from Grand Cru plus fresh oysters — that's one of the great moments of joy when dining.

Intuition Brut

Clear and fresh with notes of green apple, white peach and a hint of almond. Fine, persistent perlage, creamy texture and a dry, linear finish with focus on minerality. Highlights: green apple, white peach, creamy texture, mineral.

The Intuition is the entry into the range and already shows the house signature: minerality, clarity, precision. The Pinot Noir and Meunier component gives the champagne a bit more body and accessibility than the pure Blanc de Blancs, without losing the mineral line. A champagne that shows that even the entry level from a good grower has standards.

L'Évidence

Fresh, elegant Blanc de Blancs with citrus fruits and a hint of brioche. As a Brut Nature without Dosage, it shows itself precise and sprightly. Highlights: 100% Chardonnay, Brut Nature, citrus fruits, brioche.

L'Evidence — the evidence, the obviousness. The name fits: this champagne tries to hide nothing and add nothing. 100% Chardonnay, Brut Nature, clear and direct. The citrus fruit and hint of brioche come solely from the Terroir and lees aging. Compared to Les Visions, L'Evidence is somewhat more approachable and less strict — a good introduction to the Brut Nature world of Legras & Haas.

Conclusion

Legras & Haas is for me one of the best Blanc de Blancs growers in Champagne. The consistency in purist style, the quality of the Grand Cru sites in Chouilly and the courage to make Brut Nature result in champagnes that are hard to surpass in their clarity and precision. Anyone who loves the mineral side of Champagne and is willing to forgo opulent fruit and residual sugar will find some of the region's best bottles here.
