Climate Change in Champagne: Is the Return of Still Wine Now Coming?

A sentence that has stuck with me

A few weeks ago I came across a statement by Frédéric Rouzaud, the head of Louis Roederer, made on the occasion of the anniversaries of the house and of Cristal. He said, roughly, that in the future they might once again produce more still wine. Not Champagne, but still wine made from Champagne grapes.

I had to read that sentence twice. As a Champagne enthusiast, it sounded almost heretical to me at first. But the longer I thought about it, the more sense it made, and the more exciting I find what it could mean for the future of this region.

Why still wine from Champagne at all?

To understand why this statement is so remarkable, it helps to look back briefly. Before Champagne became THE Champagne as we know it today, it was known for centuries mainly for its still wines. The bubbles we now associate so closely with the region were, for a long time, more of an accident than the goal, a side effect of the second fermentation that people only gradually learned to control and eventually to celebrate.

The fact that a house like Roederer, which produces one of the most prestigious Champagnes of all with Cristal, is now publicly talking about a return to more still wine feels almost historic to me. It sounds like a rediscovery of something that existed long before the bubbles did.

The real reason: climate change is altering the grapes

What really occupies me about this statement is the reason behind it. It's not about nostalgia, it's about the physiology of the grapes. Champagne was historically the northernmost serious wine region in Europe, and that's exactly why the Champagne method worked so well here. A cool climate means high acidity, moderate alcohol, restrained ripeness. Perfect conditions for a base wine that can later handle a second fermentation and long aging on the lees.

As average temperatures rise, this balance shifts. The grapes reach higher sugar levels earlier, acidity breaks down faster, and harvest dates creep forward a little more each year. What I take from this: if the base wines naturally become riper, more powerful, and higher in alcohol, some lots might eventually be better suited to still wine than to the traditional Assemblage.

This, by the way, is no longer a niche topic. Other houses in the region have long been experimenting with still white wines and even red wines made from Pinot Noir and Chardonnay, some of them under the designation Coteaux Champenois, which has officially existed for a long time but has so far remained a fairly marginal product.

What does this mean for us as enthusiasts?

For someone like me, who enjoys tasting different Champagnes side by side at home, this raises an interesting question: will the character of the Champagne we have in our glasses over the next twenty or thirty years change as well?

My guess is: yes, gradually. If the base wines bring more fruit and less acidity, the style of many Cuvées could slowly shift too, perhaps toward something rounder, less razor sharp. Houses with strong oenological
