The Champagne Carbon Brut Black is actually one of those bottles you mentally reserve for oysters or caviar.

But it pairs at least just as well with homemade pizza – everything from the flour to the toppings made from scratch.

Visually, the Carbon seems pretty disruptive at first – black bottle, lots of attitude, and next to it chorizo pizza from the baking sheet. But flavor-wise it works extremely well. The spice and fat from the chorizo need something that creates space on the palate, and that's exactly what this Brut does: juicy, round and with enough freshness.

Juicy and round with enough freshness to balance spicy and rich dishes on the palate. The cuvée shows itself to be down-to-earth and versatile.
