The – Contraste was our choice for the evening this time.
A Premier Cru that shows how much expression can be found in a pure Pinot Noir.
We paired it with something that matched perfectly – salmon rounds. Inspired by , since we eat salmon quite often here anyway – but this time different: with sun-dried tomatoes, Parmesan and lemon zest. Simple, quickly made – but with surprising depth.
And that's exactly what applies to the Contraste too: Red apples, mirabelle, some brioche, fine roasted aromas and a lightly nutty spice. Creamy, lively, precise on the palate – with that cool tension that makes it so elegant.
