The grand finale: Station 10 of 10. I'm closing a chapter that has intensely accompanied me over the last months. With the Cuvée de Nature, the last bottle from stands on the table – and with that, I've worked my way through the entire portfolio of this exciting house from Chamery. When I look back on the last 9 posts – from the powerful C. de Pinots to the exclusive 2006 Millésime – there's a common thread running through the work of Isabelle and Benoist Perseval: energy, depth and a wonderful honesty. The C. de Nature is the ultimate statement of this philosophy. As Zero Dosage (Brut Nature), it comes completely without makeup. What lands in the glass here is the pure essence of the Premier Cru terroir of Chamery. On the nose, it's beautifully lively with yellow fruits, citrus zest and that typical, fine brioche note that comes from the 5 years of lees aging. On the palate it's powerful, almost demanding, with a razor-sharp minerality and a saline finish that makes you want the next sip. A champagne for purists that shows you don't need dosage when the base material is so precise. It was a fascinating journey through a house that perfectly combines artisanal tradition (like the basket press and HVE certification) with courage for niches (like the almost forgotten grape varieties). Perseval-Farge remains an absolute tip for me for anyone seeking character beyond the mainstream, and I think I need a few bottles of it back in my cellar too.

After a few minutes of air, the champagne becomes beautifully round: ripe stone fruit, a touch of honey and baking spice, plus a saline finish. Exactly this warm, slightly spicy character that I love so much in autumn.
