It has to be a rosé, the choice falls on the Piper-Heidsieck Rosé Sauvage. Good idea? Yes! Perfect idea? Well...

The combo of spicy cheese dip, hot jalapeños and salt might be a bit too intense. The rosé has enough to counter it, but against the full spicy-fat combination, a Rosé de Macération with even more structure might be the better choice.
