Binon-Coquard — Extra Pinot Noir 2021

Extra Pinot Noir 2021

Binon-Coquard | Brut Nature | Vintage 2021

I cook well, but often simple fare – and I'm always surprised how well champagne pairs with it.

With cottage pie – creamy, savory mixture of ground meat and vegetables, topped with mashed potatoes, baked crispy in the oven – the Extra Pinot Noir from Binon-Coquard works surprisingly well.

Zero Dosage sounds strict at first, almost ascetic. In the glass though, the champagne is much more approachable than you'd expect. The Pinot Noir brings enough substance to stand up to the dish without overpowering it.

On the nose, bright stone fruit, some peach, white flowers, plus restrained red fruit in the background. On the palate dry and clear, with a round, almost creamy middle that can handle the fat and warmth of the food well. The acidity is present but controlled. Exactly what a dish like this needs.

Not a classic pairing in the "fine dining" sense, but one that's surprisingly harmonious in everyday life and still makes everything feel luxurious with the champagne.

Tasting Notes

On the nose, bright stone fruit, peach, and white flowers with restrained red fruit in the background. On the palate, dry and clear with a round, almost creamy middle and controlled acidity.
