I've had some really beautiful encounters with Chavost, every bottle precise, lively, modern in concept.

But with this bottle, I encountered "mouse" for the first time.

The bottle: Blanc de Chardonnay. Actually a cuvée I really enjoy, purist, without sulfur, spontaneously fermented, like all wines at Chavost. But this time it was unmistakable.

That animal-nutty, dull-sweet note that lingers in the finish and overwhelms everything. A fascinating moment, not a pleasant one, but educational.

As much as I continue to find Chavost's concept exciting, this exact experience shows how fine the line can be between bold natural style and off-flavors.

Tasting Notes

The bottle showed a wine fault ('mouse'), an animal-nutty, dull-sweet note in the finish that overwhelmed everything. Despite the exciting natural wine concept, half the bottle had to be poured down the drain.
