One of those days: 16 hours outside – from 6 AM until 10 PM. The pool in constant use, everything a bit slowed down. Off to a trade show starting Wednesday – so I pulled out everything that promised relaxation. For dinner: crispy-spicy potato wedges, grilled turkey breast, grilled zucchini, with a creamy tzatziki. In the glass: – Les Champs de Romy. A single-varietal Chardonnay from the single vineyard Les Champs Robins. • 100% Chardonnay • Terroir: Clay-limestone soil, single vineyard in Belval • ️ Vinification: Enamel tank, malo completed • ️ Dosage: 1.5 g/l – Extra Brut • ️ Dégorgement: 05.11.2024 • Vintage: 2020 (tirage liège) • Natural vinification, minimal intervention, low sulfur addition The philosophy behind it? Right there on the closure: "Révéler mon terroir ... pour révéler vos émotions." which means "Reveal my terroir … to reveal your emotions." And that's exactly how it shows – clear, cool and elegant – but with enough grip not to get lost between roasted flavors and tzatziki. Not a loudly fruity Chardonnay, but serious, focused and with a long finish. Just right for winding down after a day like that.

Tasting Notes

A clear, cool and elegant Blanc de Blancs with serious character and long finish. Focused rather than loudly fruity, with enough grip for hearty dishes.
