Yesterday I opened the Champagne Doyard ( domainedoyard ) – Révolution – Blanc de Blancs - what an experience for the senses.
What makes this champagne special:
Grape variety: 100% Chardonnay from vines over 40 years old from Grand Cru sites in Avize, Le Mesnil, Cramant and Oger.
Vinification: Partial malolactic fermentation (about 20%), aged 50% in used Burgundy barrels and 50% in stainless steel tanks.
Aging: 78 months on lees, which gives it depth and complexity.
Dosage: Brut Nature – 0 g/l, for pure, precise expression.
In the glass:
Brilliant gold with fine bubbles. On the nose, aromas of apricot, peach, spices and chamomile. Rich and multi-layered on the palate, with notes of nectarine, melon and a hint of toasted macadamia. The long lees aging gives it a creamy texture and impressive length. My large white wine glasses from , which I rarely use, worked well here.
