The white flagship of Forget-Brimont: the Blanc de Blancs Grand Cru. If you're expecting a pure freshness bomb here, you're mistaken. This wine has a completely different story to tell. The grapes come from the best Grand Cru sites of the Côte des Blancs, but the real magic happens in the cellar.
It's allowed to age on the lees for five years. The result? An extremely complex aroma. It smells of fresh butter, brioche, and has fine smoky, almost woody accents.
Why? Because Forget-Brimont ages the dosage liqueur in oak barrels. That's exactly the fine touch that gives the wine this spectacular creaminess and depth in the end, without overwhelming the Chardonnay finesse. On the palate it's harmonious, expansive, and ends with an eternally long, toasted finish.
