Yesterday I learned something on Instagram: In France it was "La Chandeleur" – the official day of crêpes. And because traditions must be celebrated, the evening plan was quickly changed. While the kids enjoyed their crêpes with chocolate, we got the upgrade: Crêpe Suzette, flambéed with Grand Marnier.

The big question: What to pour? A sweet Demi-Sec would have been the safe choice, but today I wanted contrast. So I opened the Rosé de Saignée.

The experiment: Sticky-sweet orange caramel sauce meets 100% Pinot Noir power.

The idea was perfect: Where the sugar almost seals the palate, the Saignée sweeps through with its crisp freshness and deep fruit. After every sip, the mouth was "reset" and ready for the next bite. A real aha moment in terms of pairing.

The wine itself: No shy rosé. Here pomegranate, red currant, and an almost peppery spice hit you head-on. It's substantial, vinous, and has exactly the structure needed to not look like a supporting actor next to the Grand Marnier.
