The Laurent-Perrier La Cuvée is a solid all-rounder and an excellent oyster companion. The cuvée consists of around 55% Chardonnay, complemented by Pinot Noir and Meunier. It ages for at least 4 years on the lees, which gives it a fine perlage and elegant structure. In terms of flavor, the champagne shows wonderfully fresh with citrus notes, white peach and a light brioche nuance.

In the oyster pairing test with three variations: Tabasco – too dominant, the champagne almost disappears. Pure lemon – perfect, fresh and wonderfully harmonious. Mignonette (shallots and red wine vinegar) – the vinegar note nicely complements the champagne and emphasizes the ocean aromas of the oysters.

Conclusion: Lemon and mignonette are the winners. Served in a Riedel Fatto a Mano Black Tie – a glass that pairs beautifully with this champagne.
